Add the chickpea flour, ground flax seeds and salt to a large bowl and mix well
Add the water and whisk with a balloon whisk until smooth
Leave for at least ten minutes
Heat up a large frying pan or skillet to a medium to high heat
Spray with some olive oil (if using)
Add a ¼ cup of the batter to a pan (this will make 8 small tortillas, use a larger amount of batter for larger wraps)
Cook for around one minute until the batter is bubbling and around the edges starts to set, when you flip up the edge it will be golden brown
Flip the tortilla over and cook on the other side for around a minute more or until golden brown
Transfer to a plate to cool and repeat the process for the rest of the batter
When the tortillas have cooled they can be eaten immediately.
