Healthy granola

This healthy granola is really easy to make and so delicious. A wonderful breakfast.

Ingredients
  

  • ¼ Cup 100% Peanut butter
  • ¼ Cup Date Syrup
  • ¼ Cup Honey
  • 3 Cups Oats
  • ½ Cup Pecans
  • ½ Cup Walnuts
  • ½ Cup Hazelnuts
  • ¼ Cup Maple Syrup
  • ¼ Cup Sunflower seeds

Instructions
 

  • Get all of your ingredients together so it is easier for you and prep two baking trays with baking paper
  • Chop the pecans, walnuts and hazelnuts roughly and set aside
  • In a large bowl make a paste with the date syrup, honey, peanut butter and a splash of maple syrup, set your oven to 180
  • Add your gluten free oats to the bowl and mix well. It will feel like there are too many oats for the paste, don't worry, just keep mixing
  • Add the chopped nuts to the bowl and the sunflower seeds and mix well
  • Add the rest of the maple syrup and mix until everything is completely combined
  • Spread the mixture out onto the baking trays, some pieces will be tiny and others will be large clumps, this is what you want
  • Bake in your oven for around 20 minutes until golden, mix it a little halfway through cooking
  • Let it cool on the baking tray for ten minutes but while it is still warm give it a shake and break it up into smaller pieces if desired before it cools completely

Notes

Take into consideration that the granola will still be a little soft when it comes out of the oven.  This is ok and it will harden and get crispy while cooling.  Do not be tempted to keep cooking until crisp, this may be too hard to eat when it has had time to cool.
