Easy banana oat pancakes are a go to when I am craving a gluttonous sweet breakfast.  Or lunch, or dinner actually.  Who said pancakes were just for breakfast?  Not me!

Happy Pancake Day guys!!!  In my family we usually eat pancakes for all three meals on this day.  I just vary them up and change the toppings and also add some savory ones too, cheese and onion anyone?

Obviously I am a little more limited as I do not eat gluten, dairy or sugar but I’m not one who likes to miss out so I have devised other options.

When I want a savoury pancake I use my chickpea flour tortillas which you can find here, and maybe add a sprinkle of vegan cheese and some red onion.

When I want a sweet pancake I make these.  They are delicious, incredibly easy and fool proof.  I have never had a disaster making these, and believe me, I have tried a lot of different variations to get here.

You can obviously just use your gluten free oat flour if you have it.  If you don’t, then you can make some as the first step in this recipe.  Just whizz up some gluten free oats in your blender.  I use a ninja and I’m in love.  Any blender will do it but a great blender will do it quickly. I just blend the oats for 30 seconds but to be honest it’s probably done before that.

Why flax seeds

Firstly flax seeds are an excellent plant based source of omega 3’s and for this reason I add them to everything I can.  When you eat a plant based diet it can be more difficult to get all of your Omega 3’s unless you pay attention to it.  It is important to get enough. Secondly Pancakes can stick to the pan; flax seeds stop that from happening.

Maple syrup

Of course you can use any type of sweetener for this recipe.  Or you can omit it completely if you like.  I like to use maple syrup because I have a sweet tooth and I do not eat sugar.  Sugar can cause inflammation in the body and when you have an inflammatory condition like I do, it is best to avoid things that aggravate it.

I only use natural sugars like maple syrup, honey and date paste.  I have learnt to substitute well.  I don’t love sugar enough to live in constant discomfort or downright agony. You can read my story here.

How to make

These pancakes are super easy to make.

Firstly you need to make your oat flour if you haven’t got any.  To do this you just need to blend your oats in a food processor.

Then add to the processor all of the other ingredients. A ripe banana, some oat milk, some baking powder, some maple syrup and flax seeds.

Blend until smooth.

Add the batter to a hot pan and cook for a couple of minutes on each side.

Repeat until all of the batter is used up.

Serve with your favourite toppings.

This is one of my favourite ways to serve these pancakes. With caramelised bananas ( just add sliced bananas to a pan with some maple syrup until caramelised), pecans and maple syrup.

  • Add the gluten free oats to the blender and whizz until a fine powder is formed, usually about 30 seconds if you have a good blender
  • Now add the banana to the blender broken into chunks and all of the other ingredients
  • Blend until completely combined and smooth ( remember though it will not be as smooth as normal pancake mix)
  • Heat up a large frying pan or skillet to medium heat and spray with a little oil if desired
  • Add the batter to the pan with a large serving spoon so that you get a nice amount of batter for each pancake, I usually do two lots of 3 pancakes, but this will differ if I am feeding little people
  • The pancakes will take a couple of minutes to cook. You will know the first side is cooked because little bubbles will form on the surface
  • Carefully flip the pancakes over and cook for a couple of minutes on this side or until golden
  • Repeat this process for the rest of the batter
  • Serve with your favourite toppings
