These sugar free coconut and blueberry cookies are so delicious.  They are also really quick so you will be making them over and over, gladly.

 What is better than plain cookies?  I’ll tell you coconut and blueberry cookies, and what is better than coconut and blueberry cookies?  Well, its coconut and blueberry cookies that are sugar free!

Lets talk cookies

Who doesn’t love cookies? I know I do, all types. In this sugar free coconut and blueberry recipe I have made it super simple so it is quick and easy to make this holiday season. We are already busy preparing everything for our perfect Christmas and taking the pressure out of baking something sweet seemed like a good idea

So why sugar free?

Giving up sugar was a personal choice.  There is evidence to suggest that sugar is bad news for people with autoimmune diseases.  For the simplest explanation, it can cause inflammation.

So I eradicated it completely and now only use natural sugars like maple syrup, honey and date paste.  Do I miss it?  Not really, I have learnt to substitute.  Bottom line, I don’t miss the constant pain!  I don’t love sugar enough to live in constant discomfort or downright agony. So guilt free cookies!  Even those of you that can tolerate sugar. Can you eat a load of cookies without feeling some kind of guilt?  We all know that too much junk food is not good for us, regardless of our health factors.  These cookies will only make you feel good.  Bonus.

Gluten free

COCONUT AND BLUEBERRY  SUGAR FREE COOKIES

In this recipe I use almond flour rather than flour that contains gluten.  I do not eat gluten, it wreaks havoc in your gut and when you have an autoimmune disease it is of paramount importance to try and heal your gut, not make it worse. In fact there is strong evidence to suggest that no one can tolerate gluten, even if you think you can, and you have no symptoms of gluten sensitivity.

When you eat gluten, the lining of your gut tears and then heals itself again.  The lining of your gut heals at a rapid rate, every few days, but it ALWAYS tears. This has been shown in a study at Harvard University where a camera captured the gut lining tearing after the patients have eaten gluten, even those people without gluten sensitivity.  Most people do not have symptoms of this until one day you do because your gut is not able to rapidly heal effectively anymore.  Cue the development of autoimmune disease symptoms.  However if you really think carefully about how you feel after eating bread, or pastry or cake, do you feel completely fine, or are you slightly bloated or sluggish?

Maybe after learning that everyone has a gut that dislikes gluten, it is the time to change up a few of your gluten sources, perhaps starting with your sweet bakes at home.

Sweet treats

Having something sweet with a cuppa is one of life’s pleasures.  This is still the same for those of us who avoid all things sugar! So, finding some delicious treats that we can enjoy is paramount for sanity in my opinion. I am making it one of my missions to create as many as I can.  So watch this space!

Sugar free coconut and blueberry cookies

Ingredients
  

Instructions
 

  • Pre heat your oven to Gas mark 4 or 350°. Mix the almond flour, baking powder, coconut and the salt together into a large bowl until well combined
  • Add the maple syrup and mix well, then add the blueberries and stir gently
  • Spoon small amounts of the mixture onto two baking trays lined with parchment until you make 12 small mounds
  • With wet fingers mould the mounds into round shapes and press down until they are flattened slightly
  • Bake in the oven for 20 minutes
  • Leave to cool slightly on the tray then lift the cookies from the parchment and place them on a cooling rack to cool completely
  • Enjoy!
