Healthy maple and pecan granola

Healthy maple and pecan granola is a breakfast you will want to wake up for!  It is crunchy and sweet and also healthy because as with all of my recipes it is sugar free too.

Do you love granola?  I do! Some days I eat it for lunch as well as breakfast, I just cannot get enough!

This healthy maple and pecan granola is quick to make and keeps really well in a sealed jar.  The only problem is making enough to last, I assure you it will not stay around long.  My husband and my youngest daughter love to have it with their favourite yoghurt, I love to have it with fruit and oat milk, but our favourite way is to sprinkle on top of a smoothie bowl, but I will leave that recipe for the summer!  It is so versatile and you can mix the flavours up too.

I love this maple and pecan version, it is my favourite but you could add all sorts of other ingredients, like coconut, dried fruit, other nuts, the world is your oyster.  Once you try homemade granola and see how simple it is to make you won’t want to go back to the shop bought kind, it is too good!

Healthy

I do not use sugar to sweeten this granola, I just use maple syrup, date syrup and honey so it is so much healthier. I also do not use any oil in this either; I do not find it necessary.  Only healthy ingredients allowed!  Let’s get to it.

How to make

Collect all of your ingredients together for ease of use.

For equipment you just need a large bowl, a spoon, and a baking tray.

Make a paste with the honey, date syrup, peanut butter and a dash of maple syrup.

Add the gluten free oats and mix well, scraping the spoon as you go.  You will feel like there are too many oats for the amount of paste, but this is what you want, just keep mixing until everything is combined and the oats are all covered with the paste.

Add the chopped pecans and mix well.

Add the maple syrup and mix well.

Transfer to the baking tray and spread out evenly, you can leave it with thick clumps if you would prefer your granola this way, or separate further if you do not.  I do not use any baking paper but you can if you would prefer.

Bake for 20 minutes, mixing once, until golden brown and crunchy.

  • Spread out evenly on a baking tray.
  • Bake on gas mark 5 for 20 minutes, mixing and turning over once. Bake until golden brown.
  • Allow to cool on the tray then transfer to an airtight jar or tub to keep it fresh.
  • Enjoy and get creative with how you use it!
