Vegan almond butter cups
Vegan almond butter cups are the best thing ever! Well, perhaps, but regardless, they are very good!

They are so easy to make too. I think everyone would agree that nut butter and chocolate is a match made in heaven. However most of us are a little conscious of those added sugars these days and if you have a sweet tooth like I do I can understand why!
In this recipe I do not use sugar, these vegan almond butter cups are completely sugar free. I use maple syrup to sweeten the recipe and it works beautifully.
In fact it is all sugar that I avoid now; it is a terrible trigger for inflammation, so I leave it out completely. You can read more about why I do this here.
I normally use smooth peanut butter when making these, it gives you a chocolate cup really reminiscent of the Reese’s we all know and love but this time I decided to use almond butter and it turned out amazingly well! I also used crunchy almond butter in this recipe to mix it up a bit as I do love a crunch with my chocolate but the smooth variety is good too if that is all you have or you prefer it.
They are also vegan because I do not use chocolate with any dairy in it. I actually use 100% chocolate which is very bitter but has nothing added to it at all so it is super healthy. It sweetened it with maple syrup and add a little salt and it is so good.

Vegan almond butter cups

- 400 Grams 100 % Chocolate
- 7 Tablespoons Maple Syrup
- A few Pinches salt
- 200 Grams Crunchy almond butter
- 2 Tablespoons Peanut flour
Instructions
- Break up half of the chocolate into small pieces and melt. You can do this in the microwave if you are careful or you can do it over a simmering pan of water.
- Lay out ten of the silicone cups
- Add two tablespoons of maple syrup and a pinch of salt to the chocolate
- Add a layer of the chocolate to all of the cups until it is used up
- Then freeze for ten minutes or until it is set
- Meanwhile make the nut butter layer by mixing the almond butter, 3 tablespoons of the maple syrup and the peanut flour together until mixed well
- Add this equally to the silicone cups and press don slightly, try to leave a gap all around the edge so the next layer of chocolate can cover the butter
- Make the remaining chocolate as before and add this to the cups to cover the butter layer
- Freeze for ten minutes or until set
